I’ve had VeggieGirl’s blondies in my bookmarked “to make” recipe file for a while now. Many food bloggers have showcased both replicas and adaptations of VeggieGirl’s infamous blondies as her recipe took the foodie blogosphere by storm. One such adapted version by Shannon at Tri to Cook caught my eye, and I finally got around to making my own batch.

Lime, Coconut, and White Chocolate Blondies

adapted from VeggieGirl’s recipe and inspired by Shannon’s recipe, as linked above

Ingredients:

  • 6 oz container key lime yogurt (I used Wallaby Lowfat Organic Key Lime)
  • 1/4 cup unsweetened applesauce
  • 1/2 cup pure maple syrup (or 3/4 cups if you prefer your blondies a little sweeter)
  • 1 tsp pure vanilla extract
  • 1 tsp coconut extract
  • 1 1/4 cup white whole wheat flour
  • 3/4 tsp baking soda
  • 1/2 cup white chocolate chips
  • 2 Tbsp shredded unsweetened coconut
  • zest from 1 lime, about 2 tsp
  • 2 Tbsp vanilla almond milk, or more or less as necessary
  • canola oil cooking spray

Directions:

  1. Combine the first 5 ingredients (through coconut extract) in a large bowl.
  2. Add in the flour and baking soda, and mix until dry ingredients are fully incorporated into the wet ingredients.
  3. Stir in the white chocolate chips, shredded coconut, and lime zest.
  4. Add in the almond milk, mixing just until the mixture reaches a pourable consistency (it should still be quite thick).
  5. Spray a square 8 x 8 inch baking pan with the canola oil, and pour in the blondie batter.
  6. Bake at 350* for about 25 minutes, or until a wooden toothpick inserted into the center of the blondies comes out clean.

These blondies came out unbelievably light, moist, and scrumptious! The top developed a golden brown crisp crust, while the center remained melt-in-your-mouth soft. The lime and coconut flavors played beautifully well with the white chocolate, and the maple syrup lent the perfect amount of sweetness (though, as noted, you might want to add a touch more if you prefer your blondies sweeter).
