I found unsulphured & unsweetened dried banana at Trader Joe’s a while back, and have been meaning to recreate the Banana Bread Larabar ever since.


I used my basic technique for homemade Larabars, using the following nut to dried fruit ratio:
- 1/2 cup chopped & pitted medjool dates
- 1/2 cup raw, whole almonds
- 1 piece of dried banana, about 3 Tbsp chopped

I cut the bars into 3-bite squares, wrapped them in plastic wrap, and stored them in the fridge. You could store them in the pantry, but be sure to wrap them tightly in plastic wrap and then place them in an airtight container.
